Invoice and Product Count

Could you please specify what field exactly you want to be update for Products when the invoice is paid so that we can provide you with the correct suggestion of how it can be achieved.

I am hoping to have the number of units in the product section to be reduced by however many units are included on a completed invoice. 

Unfortunately there is no such functionality out-of-the-box. However, you can create a new business process that starts on closing an order and modifies the quantity of the products.
