I see there are quite a number of charts and reports on opportunities. But can I design additional analytics? And how?

Matt, yes additional analytics can be added within the bpm'online system with appropriate access rights. Simply click on the settings arrow on the top right corner of the Analytics, then click add to design one of your own.
