Extend SendEmailUserTask

Hi community. 
Has anyone ever tried extending ootb user tasks used in the processes? 
I want to extend the SendEmailUserTask to allow overriding recipient address for dev/pre environments. 

Is it possible and if so, do I still need to replace the element everywhere?
