How do I hide or remove certain stages in the funnel from the output?
The funnel shows all possible stages, after which it outputs data only to those fields that we filter. And it is necessary that the filtered fields are not shown, hidden or deleted. It will not be possible to get it through the observer because it comes as one monolithic object, not different fields

To hide specific stages from the sales funnel, please configure their visibility in the Opportunity stages lookup.
The sales funnel in Creatio always displays all stages that have the Show in funnel flag enabled. Therefore, to hide or remove a stage from the funnel output, follow these steps:
-Open System Designer.
-Go to System setup → Lookups.
-Open the Opportunities folder → Opportunity stages lookup.
-Select the stage you want to hide.
-Disable the “Show in funnel” flag.
-Save the changes.
After this, the stage will no longer appear in the funnel, even if there are filtered opportunities on that stage.
Creatio does not dynamically remove stages based on filters - the funnel is built strictly from the stages that have Show in funnel enabled.
