Hi, everytime a new case is opened a specific group is assigned as the service group in Case section.
Where do I change this settings to have another group in place?

Good day,
Out of the box, there are no processes that populate the case assignee group by default.
The behaviour you are describing may be tied to some custom logic, such as business processes.
Alternatively, you may study this article on Creatio Academy that covers an AI prediction model that can potentially be handling this on your site.
