What is a purpose of setting Owner as a entity schema object settings. Is this has a impact to access right distribution ?

This field is the field of the current object that refers to the Contact object. In case when you enable "Record permissions" for the specific object, the type of the contact specified in this field will receive permissions to the records from that object.
For example, you can find that some out-of-the-box objects which have enabled the "Record permissions" option by default, there will be selected "Owner" type:
