I am trying to add values to the activity result lookup, but the problem is they are getting filtered out. I see there are different values for different types of activities, but I am unable to add a category to my new value in the activity result lookup. There is an ActivityResult object and I see there is a cross-reference to ActivityCategoryResultEntry and I suspect ActivityCategoryResultEntry is where I need to set the category. I am unsure how to access this object and set that my new record in ActivityResult is a call result.

You need to go to the Activity Results lookup, create your new result record and open its page. There you need to select the call on Categories detail. (call category Id is 908f87e4-9b85-4611-9179-fec1158ac990 just for reference).
As the result, the required result will be visible when category Call is selected on the activity page.
