What features/apps can I use/modify before deploying on the cloud production environment ?

Hello Eran,
The onsite instance can work without licensees, but you will be limited to only having 1,000 records per section.
As per your development question - you are able to modify everything that you need in order to achieve your business task.
The only restriction is that you are not allowed to unlock the basic packages, you need to replace them in order to modify some basic logic.
